Winter is the time for hearty foods to warm and comfort the chilly soul. Here is a very Canadian version on an old fashioned favourite:
Maple Butter Tarts
20 3" tart shells, unbaked
2 eggs
1 c brown sugar, dark -- packed
1/4 tsp salt
2 tsp vinegar, white
1/2 c maple syrup
6 Tbsp unsalted butter -- melted
Preheat the oven to 450.
In a bowl, beat the eggs only until yolks and whites are well-blended. Add sugar, salt, and vinegar, mixing well. Add melted butter and maple syrup.
Fill the tart shells and bake for 7 minutes, then reduce the oven temperature to 350 and bake 5 to 8 minutes longer, or until tarts are bubbling.
